Wholesome Zucchini Bread
Yields One 9"x5" Loaf Pan
Ingredients:
2 1/4 cups Cup4Cup Wholesome Flour
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1 teaspoon kosher salt
3 large eggs‚ at room temperature
1 3/4 cups granulated sugar
1 1/2 teaspoons vanilla extract
1 cup vegetable oil
2 1/2 cups grated zucchini
Instructions:
PREP: Preheat oven to 350°F. Grease a 9" x 5" loaf pan. Mix Cup4Cup Wholesome Flour‚ baking powder‚ baking soda‚ cinnamon‚ ginger and salt. Set aside.
MIX: Whisk together eggs and sugar until pale yellow in color. Whisk in oil slowly. Stir in the zucchini and vanilla extract. Fold in the flour mixture and mix until incorporated.
BAKE: Spread batter evenly into the loaf pan. Bake for 1 hour to 1 hour 30 minutes. The loaf will be golden brown and spring back when pressed in the center. Cool on a wire rack.
